Together with sustainability visionary Gunter Pauli, EkofungiSchool's Ivanka and Milan completed a variety of integrated mushroom-from-waste projects across four continents. Mushroom farming businesses were established to recycle brewing residues, apple branches, water hyacinth biomass, salt cedar biomass, pineapple residues, banana leaves, and weeds biomass.
Ivanka from the EkofungiSchool and Dr. Sylvia Barbieri from the Polytechnic University of Torino cultivated the world's first mushroom on coffee waste at Ekofungi's production facilities in Belgrade. Enthusiasts from around the world started coming to Ekofungi to learn how to grow mushrooms on coffee waste.
The arrival of the first group of participants marked the official beginning of the Ekofungi School. 25 years of experience of mushrooms-on-waste business was packaged into a comprehensive course. We look forward to welcome the next mushroom entrepreneurs and continue to support the development of sustainable mushroom cultivation.
